Coconut Noodles with Tofu

D.Jones asked if I would make something tonight that involves tofu.  As luck would have it, I had ingredients on hand to make a bit of a riff of a rice noodle dish I’d made once.  So, here’s what we ended up with…

Coconut Noodles with Tofu

1/2 package of whole wheat fettucini noodles (approximately 8 oz)

2 T. vegetable oil

1 package extra firm tofu

1/4 red onion, diced

1 teaspoon minced ginger

1/2 cup light unsweetened coconut milk

2 T. soy sauce or tamari

1 tsp brown sugar

1/2 tsp red pepper flakes (I’d normally use more but I was being kid-friendly)

salt and freshly ground black pepper

about 2 handfuls of fresh bean sprouts

chopped cilantro for garnish

Drain tofu package and press tofu square with paper towels to remove excess liquid.  Cut into 1/2 inch cubes.  Add oil to large skillet and heat over medium-high heat.  Add tofu and allow to begin to brown.

Meanwhile, add fettucini noodles to pot of boiling, salted water. 

While pasta noodles are cooking, add onion  and ginger to tofu and reduce heat to medium low, stirring occasionally.

When noodles are al dente, drain in colander and return to large pot.

In mixing bowl, mix coconut milk, soy sauce, brown sugar and red pepper flakes.  Combine with fork until blended and pour over tofu and onions.  Stir to mix.  Allow to heat through for approximately 3 to 5 minutes, then add bean sprouts and stir again to combine. 

Pour sauce with tofu and coconut milk mixture into the large pot containing the fettucini noodles.  Season with salt and pepper and toss to mix.  Serve in individual bowls topped with fresh cilantro.

D.Jones liked it but found it a little bland.  With a few shakes of soy sauce over the top, he thought it was quite good.  Cooper ate the noodles, but picked out the tofu…again!
