Black Beans and Rice

Easiest dinner on earth…my black beans and rice.  I always have all the ingredients on hand because they are just staples in my kitchen, and on days when the afternoon seems to get away from me, or there is a lot on the schedule, this is a perfect go-to dinner to still get a healthy, well-balanced meal on the table.  And let’s be honest…on my Ghosthunters nights, I need something that’s fast and also fast to clean up so I don’t miss a minute of the action!

Easy as Black Beans and Rice Dinner

1 cup brown rice

2 cups water

1 T. olive oil

1 tsp salt


2 T. olive oil

1 large red onion, diced

1 T. chili powder

2 cans of organic black beans

1 cup salsa (I use medium, but use whatever you like)

1/4 cup water

1 avocado

cilantro for garnish

Combine rice, water, oil and salt in medium saucepan.  Bring to a boil, then cover and reduce to simmer for approximately 50 minutes or until rice is cooked and can be fluffed with a fork.

While rice is cooking, heat olive oil in medium skillet over medium heat.  Add onions and saute until starting to soften.  Add  chili powder and stir until mixed.  Add salsa, beans and water and stir until heated through.  Turn heat down to low.

Slice open avocado and remove pit.  Cut avocado into bite-sized chunks.

To serve, spoon rice into bowls or onto plate.  Top with desired amount of bean mixture, sprinkle with chunks of avocado and cilantro leaves if using.  You can also add a dollop of low fat sour cream if you’d like.

  • Normally I would add one jalapeno to the first step of the onion saute, but I’ve reduced the heat to accomodate a toddler’s taste.  You can use a jalapeno if you like the heat.  To substitute, I always have Tapatio hot sauce on hand for the adults at the table.

Mmmmm…I love the smell of onions sauteeing…


And the finished product.  So good!
