Easiest Pumpkin Pie Ever

I’ve been so psyched that D.Jones put the stamp of approval on getting a brand spankin’ new gas range that I decided I’d bake his fave tonight.

Now, this is seriously one of those “if I can do this, you can do this” kinda things.  I don’t bake very frequently, and certainly not pie, but I did and it turned out great.  Well, apparently great, since D.Jones just consumed half of it in one sitting.  And I’m not kidding.

Kristin’s Easy-As-Pie Pumpkin Pie

1 15 oz can organic pumpkin

1 1/4 tsp cinnamon

 3/4 tsp nutmeg

1/2 tsp sea salt

1 14 oz can sweetened condensed milk

2 eggs, slightly beaten

Use whatever pie crust you like in a regular sized pie pan.  Mix pumkin, cinnamon and nutmeg until well mixed.  Add remaining ingredients in order.  Blend with fork until smooth and just well blended.  Pour into pie shell.  Bake at 450 degrees for 15 minutes.  Reduce temperature to 350 degrees for approximately 30 minutes, or until pie crust is lightly browned on the edges and toothpick inserted into center of pie comes out clean.  Let cool before slicing.
